Shakshuka is one of the most iconic dishes of the Middle East and North Africa. This mixture of eggs, stewed vegetables, and spices impresses with its simplicity and intense flavor. Quick and easy to prepare, it offers a delicious dish that can be served for breakfast, lunch, or dinner.
Ingredients required:
4 eggs
2 green peppers
500g canned tomatoes (or fresh, if in season)
2 cloves garlic
1 onion
pinch of cumin
pinch of salt
pinch of sugar
black pepper to taste
parsley for sprinkling
cooking oil
Preparation: Heat a little oil in a deep frying pan and add the finely chopped onion. When it is soft, add the deseeded and sliced peppers and the crushed garlic. Sauté for a few minutes until the vegetables are tender and aromatic.
Then add the grated or chopped tomatoes with their juice. Season with salt, a pinch of sugar to balance the acidity, black pepper, and cumin. Reduce the heat and simmer gently, stirring occasionally. The sauce should thicken and gain flavor.
Once the tomato base is ready, make small incisions with a spoon and crack the eggs one by one. Cover the pan and cook over low heat until the whites are set and the yolks are slightly runny or firm, depending on your taste.
