In a bowl, beat the egg yolks with the sugar until light and fluffy.
Add flour, cornstarch, vanilla extract, and melted butter. Mix gently.
Beat the egg whites with a pinch of salt until stiff peaks form. Gradually fold them into the batter, gently lifting them with a spatula.
Pour into a buttered and floured baking tin.
Bake for about 25 minutes, until the pastry is lightly golden.
