Ultra-soft cloud cake: a light sweetness that melts in your mouth

In a bowl,  beat the egg yolks  with the sugar until light and fluffy.

  • Add flour, cornstarch, vanilla extract, and melted butter. Mix gently.

  • Beat the egg whites  with a pinch of salt until stiff peaks form. Gradually fold them into the batter, gently lifting them with a spatula.

  • Pour into a buttered and floured baking tin.

  • Bake  for about 25 minutes, until the pastry is lightly golden.

  • Leave to cool and sprinkle with powdered sugar before serving.

Tips for perfect softness

  • Always sift flour to avoid lumps and maintain a light consistency.

  • Do not open the oven before 20 minutes of baking, otherwise the cake will collapse.

  • For an even more aromatic version, add a dash of lemon or orange juice.
