This is absolutely delicious. Don’t change a thing! I took this to a dinner party and everyone loved it but I’ve been making it at home just for us too.

Eggs 3
Vanilla extract 1 teaspoon
Crushed pineapple, drained 1 cup
Buttermilk 1/2 cup
For the Pineapple Frosting:
Ingredient Quantity
Unsalted butter, softened 1/2 cup
Powdered sugar 4 cups
Crushed pineapple, drained 1/4 cup
Vanilla extract 1 teaspoon
Shredded coconut (optional) 1/4 cup (for garnish)
Instructions:
Preheat Oven & Prep Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan thoroughly.
Combine Dry Ingredients: In a large mixing bowl, whisk together the 2 cups all-purpose flour, 1 1/2 cups granulated sugar, 1 teaspoon baking soda, and 1/2 teaspoon salt.
