METHOD
Peel and mash the cooked potatoes.
Mix the mashed potatoes with salt, pepper, nutmeg, egg yolks, and Parmesan cheese.
Cut the cheese into rectangles.
Take a few spoonfuls of the mashed potato mixture and form a patty, then wrap it around the cheese, ensuring it is completely covered.
Whisk 2 eggs and coat each potato fritter with the egg wash and breadcrumbs.
Fry for 6-7 minutes, or until evenly golden brown.
