Mini Vanilla Cakes THE RECIPE Mini Vanilla Cakes

Preparation

  1. Preheat the oven  to 180°C (gas mark 6) and prepare a mini-cake or muffin tin by lightly greasing it.

  2. Mix the dry ingredients.
    In a bowl, sift the flour with the baking powder and a pinch of salt.

  3. Beat the eggs and sugar
    In a separate bowl, whisk the eggs with the sugar until the mixture becomes frothy and light.

  4. Add the vanilla and butter
    Stir in the melted butter and vanilla extract, then mix well.

  5. Gradually add the flour and milk.
    Add the flour alternately with the milk to obtain a smooth and homogeneous dough.

  6. Fill the molds
    Pour the batter into the molds 2/3 full to prevent it from overflowing during cooking.

  7. Bake
    Bake for 12 to 15 minutes, until the mini cakes are golden brown and a toothpick inserted comes out clean.

  8. Cooling and decorating:
    Let them cool on a wire rack. You can sprinkle them with icing sugar or decorate them with vanilla icing.
