I’ve been preserving peppers in jars this way for 10 years. A recipe from my grandmother’s notebook!

How to Can Peppers

Clean the peppers of seeds and stems.
Wash them well.
Cut them into large pieces.
Place them in a large bowl and add the finely chopped garlic and parsley.
Prepare the marinade.
Mix the water with the vinegar, then add the sugar and salt.
Stir well to dissolve the salt and sugar.
Pour the marinade over the peppers.
Cover them and leave them in the refrigerator for 24 hours.
Then place them in a jar.
Close the jars tightly with new lids.
Place them in a large saucepan, placing a cloth at the bottom to prevent the jars from breaking when boiling.
Cover them with water. Let them
boil for 10 minutes over low heat.
Remove them and turn them upside down until they cool.
Then store them in a cool, dark place, such as a pantry.
