
I make it five times a week and we love it! I’ve already shared the recipe with all my friends.
In a deep bowl, beat the eggs with a fork or whisk. Add 150 ml of milk, a pinch of salt, black pepper, and turmeric, then mix well.
2. Cut the zucchini into thin slices or cubes, season with salt, and let it sit for 10 minutes. Then drain off any excess liquid.
3. Dice the onion. Grate the carrot. In a skillet over medium heat, heat the olive oil and sauté the onion and carrot for 3 to 5 minutes, stirring occasionally.
4. Finely chop the garlic cloves and add them to the pan. Fry for another 2 minutes, being careful not to burn the garlic.
5. Dice the yellow pepper and tomato and add them to the pan. Stir and season with black pepper and Italian seasoning. Let cook briefly, about 1 to 2 minutes.
6. Add the fried vegetables and drained zucchini to the bowl containing the eggs and milk. Mix everything well.
7. Transfer the mixture to a baking sheet greased with a little olive oil. Top with the tomato slices, finely chopped green onions, and some grated cheese.

Bake in a preheated oven at 180°C for approximately 25-30 minutes or until golden brown.

8. Serve the dish hot, garnished with fresh green onions, if desired.
