Place the peeled potatoes in a bowl and mash them into a smooth paste.
Add salt, pepper, garlic powder, parsley (to taste), grated cheese, and half the cornstarch.
Knead by hand, gradually adding more cornstarch until you obtain a soft and pliable dough (as shown in the first image).
Roll out the dough on a flat surface and cut it into sticks (as shown in the second image).
Fry the sticks in plenty of hot oil until golden brown and crispy.
Drain them on paper towels.
Oven version:
Preheat the oven to 200°C (400°F) (conventional oven setting).
Place the sticks on a baking sheet lined with parchment paper or a silicone baking mat.
Lightly brush them with oil or spray them with cooking spray for even browning.
Bake for 20 to 25 minutes, turning halfway through for even browning.
Tips:
For extra crispiness, bake longer or finish under the broiler for 3 to 5 minutes.
For a deeper brown, sprinkle with grated cheese before baking.
