1. Prepare the ingredients
Squeeze the lemon to obtain 50 ml of juice and finely grate the zest of one unwaxed lemon. Place the heavy cream and mascarpone in the refrigerator until ready to use to ensure they set properly.

2. Whip the cream
In a large, chilled bowl, pour the heavy cream and mascarpone. Whisk with an electric mixer at medium speed, then gradually increase.

When the mixture begins to thicken, gradually add the icing sugar and continue whisking until stiff peaks form (2 to 3 minutes). Be careful not to over-whip.
