Apple Mascarpone Fondant

To make an apple mascarpone fondant for 6 to 8 people, here are the ingredients you need:

 

3 apples (sweet variety like Golden or Gala)

250 g mascarpone

3 eggs

100 g de sucre

100 g of flour

1 sachet of baking powder

1 teaspoon vanilla extract

50 g melted butter

A pinch of salt

Instructions

1. Preheat the oven:

Preheat your oven to 180°C (gas mark 6). Butter and flour a 22cm cake tin to prevent the cake from sticking.

2. Prepare the apples:

Peel the apples and remove the core and seeds using an apple corer or a knife.

Cut the apples into thin, even slices for even cooking.

3. Prepare the dough:

In a large bowl, whisk the eggs and sugar with a mixer or hand whisk until the mixture becomes white and frothy.

Add the mascarpone and vanilla extract, then mix well until you get a smooth and even texture.

4. Add the dry ingredients:

Sift the flour, baking powder and pinch of salt into a separate bowl, then add them to the previous mixture.

Mix gently to avoid lumps.

Then add the melted butter, still warm, and mix again until completely incorporated.

5. Add the apples:

Add the apple slices to the batter. Use a spatula to gently mix them in so they don’t break. Make sure the apples are well coated with the batter.
