To make a mascarpone apple fondant for 6 to 8 people, here are the necessary ingredients:
3 apples (sweet variety such as Golden Delicious or Gala)
250g of mascarpone
3 eggs
100 g of sugar
100g of flour
1 sachet of baking powder
1 teaspoon of vanilla extract
50g of melted butter
A pinch of salt
Instructions
1. Preheat the oven:
Preheat your oven to 180°C (gas mark 6). Grease and flour a 22cm diameter cake tin to prevent the cake from sticking.
2. Prepare the apples:
Peel the apples and remove the core and seeds using an apple corer or a knife.
Cut the apples into thin, even slices for even cooking.
3. Prepare the dough:
In a large bowl, whisk the eggs and sugar with a mixer or hand whisk until the mixture becomes white and frothy.
Add the mascarpone and vanilla extract, then mix well until you obtain a smooth and homogeneous texture.
4. Add the dry ingredients:
Sift the flour, baking powder and a pinch of salt into a separate bowl, then stir them into the previous mixture.
Mix gently to avoid lumps.
Next, add the melted butter, still warm, and mix again until fully incorporated.
5. Add the apples:
Add the apple slices to the batter. Use a spatula to gently mix them in so as not to break them. Make sure the apples are well coated in batter.
