Ingredients:
1/3 cup rice vinegar 1/3 cup water 1/3 cup + 2 tbsp sugar 1 tablespoon rice wine 2 tsp dried chili flakes 1 1/2 tsp minced garlic 1 tsp finely minced ginger 1 tsp soy sauce 2 teaspoons cornstarch dissolved in 1 tablespoon water
Instructions: Place all of the ingredients except for the cornstarch mixture in a small saucepan and bring to a boil while stirring. Once the sugar has fully dissolved, stir in the cornstarch slurry. Keep stirring until the sauce thickens, about 1 minute. Let cool completely before transferring to a jar. Store in the fridge for up to 1 week.
Chili Garlic Oil Ingredients
Ingredients:
1 cup neutral oil 1/4 cup dried chili flakes 6 cloves garlic, finely minced 1 small shallot, finely chopped 1 tbsp soy sauce 1/2 tsp salt 1 tsp sugar 1/2 tsp smoked paprika 1 tbsp sesame seeds 1 small cinnamon stick
Instructions: Heat oil in a saucepan over medium-low. Add garlic, shallots, and cinnamon. Cook gently until garlic turns golden. Turn off the heat and stir in chili flakes, salt, sugar, paprika, and sesame seeds. Let cool slightly, then add soy sauce. Cool completely before storing in a clean jar in the fridge for up to a month.
Honey Garlic Glaze Ingredients
Ingredients:
1/2 cup honey 1/4 cup soy sauce 4 cloves garlic, minced 1 tablespoon rice vinegar 1 tablespoon cornstarch (optional) 2 tablespoons water 1 teaspoon fresh ginger (optional)
Instructions: In a saucepan, combine all ingredients except cornstarch and water. Simmer for 4-5 minutes. If thickening, mix cornstarch and water to make a slurry, then stir it in. Simmer another 1-2 minutes. Cool slightly before using.
Sweet and Sour Sauce
