Ingredients (for 4 people):
3 medium zucchini, very fresh
1 large yellow or white onion
2 cloves of garlic
2 potatoes (for more creaminess)
3 tablespoons extra virgin olive oil
1 liter of vegetable (or chicken) broth
15 cl of liquid crème fraîche (optional but recommended)
Salt and ground black pepper
A few fresh basil or parsley leaves for decoration
A drizzle of olive oil or a few drops of walnut/hazelnut oil to enhance
